GastroSchool's Director of Education recalls a previous project as a then Head of Faculty (Hospitality and Catering)
"The most important aspect is establishing, in this area, a food culture. That's hugely important, for people to take on board the fact that hospitality and catering is a very worthy and viable career where students can actually go out and earn a very, very good salary.
So we need to embed the food culture, we need to raise the awareness, we need people to take that on board and to try and understand our industry with all it's intangibles.
I think once people do that and they see what can be achieved for students coming in, sometimes with very little qualifications, going through our system and offering them employability at the end, they will realise what we are doing and hopefully that will set us up for a great future."
