Executive Chef Lionel Khelil Director of Culinary Arts is committed to the principles of classic cookery, his vast repetoire of menus through the concept of 'menu engineering' were used successfully by him for the business and first class passengers of Singapore, Japanese and American Airlines.

His subject passion is evident throughout the catering cycle model and ensures students of all ages are guided in principles that form the basis for best practice in either cooking for pleasure or for business.
